Just look at the edges of that transition.

Usually you wouldn’t be able to snap a screenshot of this particular
flip transition, but iBooks 1.1 ran so badly on my iPhone 3G that I’m
pretty sure even this transition paused for a second, allowing me to
grab the pic you see above.

…much less turn them off system-wide. You’ll notice that this
particular web page isn’t rendered in Safari, but rather the iBooks
iTunes Store browser, which is some implementation of WebObjects if I
remember correctly.
